Simple Onion Soup

SOUPS

This is a simple recipe that requires few ingredients and is very bobbielicious. It takes a little while to cook so patience!

Budget: Very cheap
Easy on tummy: Medium

Ingredients:

  • 2 tablespoons of olive oil or sunflower oil
  • 1 tsp of iodised salt
  • 1 tsp of thyme
  • 1 tsp of oregano
  • 6-7 medium sized onions
  • as much chopped parsley as you want!

Method of cooking:

I start every meal with heating the pot with the oil and spices together. With this one you don't want to fry them, just gently heat them and mix them until you smell their aroma.

Pre-chop all the onions to medium sized pieces. When your spices are heated up, add the onion in the pot and stir until they are coated well in the oil, thyme, oregano and salt. Add a bit of water so there is a thin layer of water under the onions and the pot. This will stop them burning. You want to slowly cook them until caramelised. Keep adding water occasionally, but not too much, and stir. Cook with the lid on so the water doesn't evaporate.

When they have sticky consistency and are well cooked, add boiled water. Turn off hob, stir and wait to cool down a bit. Then I put it in the blender and voila soup is ready!

At the end I add lots of ground pepper and all the chopped parsley. It adds extra layers of flavour and spicyness!

Enjoy!
