This is a very quick recipe inspired by Moroccan cuisine. You can even eat it cold and take into work!
Ingredients:
- 1 large aubergine
- 2 spring onions
- 1 tsp paprica
- 1/2 tsp chilli flakes or red chilli
- 2 tbsp olive oil
- 1 medium tomato (or a 4-5 cherry tomatoes)
- chopped fresh corriander
- a few spinach leaves
- couscous
Method of preparation:
Chop aubergine in cubes. Heat the olive oil in a pan and and add the aubergine. Slowly spread the paprika and chilli so they coat everything. Stir fry for 5 minutes on medium to high heat.
Chop the spring onion in circles and the tomatoes in fine pieces. Add in the stir fry and cook until the aubergine is golden in colour and the tomatoes start going gooey.
Meanwhile, boil some hot water and prepare the couscous. Normally the ratio is 2:1 water to couscous. Cover with the boiling water and a squeeze of a lemon and let cook.
Serve with spinach leaves and the fresh coriander.
